Our Fresh Oysters are Kumamoto and Aqua-Rodeo Farms Bucksport branded Oysters. Both of these Oysters are delivered fresh weekly from Humboldt Bay. Kumamotos have a nutty flavor with a sweet finish. Bucksport Oysters, a Pacific Oyster, are briny and robust with a melon finish

As Humboldt Fog matures, the layer of proteolysis just under the rind will increase developing a more intense flavor.
    • Midnight Moon Aged six months or more, this blushing ivory colored cheese is dense and smooth with a slight crunch of protein crystals that form naturally with aging. Nutty and brown buttery up front with a long caramel finish.

    • Habanero Jack If you like hot, this is the cheese for you. Creamy Monterey Jack cheese mixed with fresh habaneros and sun-dried carrots.
    • The Real Humboldt Gold “The Real Humboldt Gold”, made with our own rich Jersey milk and three distinct cultures, promises to be one of our best. This cheese has been made exclusively for the Humboldt Arts Council and a percentage of profits will be donated to them, giving us the opportunity to give back to the community.
